I'm in a gluten coma. All the wheat I've been consuming lately (cookies, bread etc), which is chalk full of gluten, has put me into a lethargic stupor of bloated proportions. But, as I always do, I still want to have my cake and eat it too. And as my friend Gill wisely pointed out - what's the point of having cake if you can't eat it? So as a solution to my inflated gut and general gluten-induced fatigue, I found an easy recipe that makes delicious gluten free peanut butter treats! This means I can still have a sweet kick, without feeling bloated, heavy, and sluggish afterwards. Yum!
Its important to note that some peanut butters may contain gluten, however if you use the most natural peanut butter (basically ground peanuts) from your nearest health food store, they generally don't contain gluten. This recipe would also turn out delicious cookies with almond butter instead of peanut.
Did I mention these are easy?
Peanut Butter Gluten-Free Biscuits
125g unsalted butter
175g brown sugar
125g peanut butter
1 large egg
1tsp baking powder
175g rice flour
Preheat oven to 180C/Fan 160C/350F/Gas 4
1. Cream together the butter and brown sugar, then beat in the peanut butter and egg.
2. Mix in the baking powder and flour.
3. Place teaspoonfuls of the batter, leaving space in between each, onto a greased baking tray.
4. Bake in a pre-heated oven for 15-20mins (bake for less time to keep them more soft, and more time for a more crisp and crunchy biscuit).
