Gluten Free Orange Polenta Cookies

Now I know most of you are in post-holiday January diet mode (one that I am wholly against) but you can't deny yourself from all things sweet now can you? With the economy still in a lull, you might as well not torture yourself further with cinched belts (in every sense), so yes, enjoy something. These cookies won't cost you in weight or in wallet. Besides this is a New Year and a Fresh Start. Nothing like Gluten Free Orange Polenta Cookies to set you in the right guilt-free, and enlightened spirit...

Gluten Free Orange Polenta Cookies 

1/2 c butter
1/2 c organic cane sugar
1 egg
1 tsp vanilla
juice of half an orange
grated zest of 1/4 orange
heaping 1/3 c polenta
1 1/2 c brown rice flour
1 Tblsp corn starch
1/2 tsp baking powder
1/4 tsp baking soda

1. Cream together butter and sugar. Then add the egg and vanilla, and combine. Finally add the orange juice and zest and mix all together.

2. Whisk together the polenta, rice flour, corn starch, baking power and baking soda in a separate bowl, then combine with wet ingredients.

3. Preheat the oven to 345F, and place round balls of the dough (do not flatten the dough) onto baking sheets lined with parchment paper. Bake for 8-10mins.

Serve with some orange peels on top!

  1. Did you use precooked polenta or did you boil it before adding it to the recipe?

  2. I used quick cooking, dry polenta, which is basically stone ground cornmeal. It is not the precooked kind. Hope that helps and enjoy!
